If you’re a Disney fanatic, you’ve probably heard of the famed “Dole Whip” – a frozen soft-serve pineapple concoction sold at Disneyland and Disney World (along with a few other locations). On hot days, you may find lines out the door for this tasty treat, but the ingredients are simple enough that you can make a similar (and healthy!) treat for your kids this summer at home.
We adapted the recipe from the blog “Chocolate Covered Katie.” Her original recipe is found here.
Frozen Pineapple Treat (Makes 2 adult servings or 4 child servings)
1/2 cup unsweetened almond milk, coconut milk, or regular milk
½ Tablespoon lemon juice
Pinch of salt
2 cups frozen pineapple*
1 Tablespoon agave nectar, honey or other natural sweetener
- Place all of the ingredients into a blender and blend until smooth. If your blender is having a tough time blending it completely smooth, just add water 1/8 cup at a time until it is the consistency you desire. If the consistency becomes too smooth, just place in the freezer for 30 minutes or until it’s more solid.
- Serve in small cups or bowls or freeze in popsicle molds. The recipe makes 8-10 kid-sized popsicles.
* Be sure to use frozen pineapple instead of fresh. If you have fresh pineapple on hand, simple place on a cookie sheet and “flash freeze” in the freezer for 45 minutes to an hour.
You can also make a variation of this recipe using other fruit added to the pineapple. Just stick with 2 cups fruit to ½ cup milk ratio for the best consistency!
